Recipe: Campfire Foil Pockets

How about planning to have foil-pockets when you're out camping (IF you have a cooler)... or taking what's in your fridge to make foil-pockets for an inspired family leftover-night? Easy to prepare and just as easy to clean-up!

NOTE: these are perfect when you are cooking in your backyard because of no electricity, and when you need to empty out that fridge before things go bad.


First and most important, the aluminum/tin foil. Use heavy-duty if you have it. Use double-thickness if your foil is thin. You'll need sheets about 2 feet long.


Next, spray or oil the sheet not only where you'll be placing the food, but also on the part that you'll fold over it.


Place the food on the middle part of the foil. Fold up the foil to make a nice pocket. Edges need to overlap to make the seal. Roll up the ends, good and snug. Leave a little room for expansion (steam).


Here's some suggestions:
  • fish (trout, etc.) with wild rice, onion, lemon, lemon juice and lemon pepper
  • jambalaya with different kinds of sausages, mushrooms, tomatoes, onions, carrots and celery
  • veggie mix with green beans, carrots, broccoli, mushrooms, chives
  • salmon, asparagus, wine, lemon and chives
  • chopped apples with walnuts, raisins, brown sugar, cinnamon, butter and 1 or 2 raw biscuits
  • hamburger patty smothered with canned baked beans (I like to add a couple tablespoons of chopped onions too)
  • grilled cheese (butter outsides with cheese in the middle - add spices, parsley or sliced tomato for added taste)
  • sliced fajita meat with salsa, onions and peppers - place wheat tortillas in a second foil pocket and heat for only a few moments, just before the fajita meat is done
  • stuffed onions (ground beef, diced tomatoes, diced potatoes)
  • stuffed bell peppers (pre-cooked rice, ground beef, etc.)
  • popcorn (use double or triple thickness - leave lots of room for popping - equal amounts of oil and popcorn), seal tightly, tie to a stick and shake over coals.
  • pita bread pizzas (spaghetti or pizza sauce, cheese, pre-cooked sausage or pepperoni, onions, mushrooms, etc.)
  • half an orange, scooped out to leave only the rind, then fill the half of orange rind with prepared cake batter (chocolate or white or yellow) or a raw cinnamon roll (from a package) or raw biscuit dusted in cinnamon and brown sugar - wrap in buttered foil. Leave room for expansion. When it's time to cook, place carefully in hot coals. Be sure to place correctly so the cake mix or roll or biscuit stays in the orange half.
  • Sliced banana, place chocolate chips and miniature marshmallows in banana's slit, place in buttered foil, close banana as much as possible, and tightly wrap. Delicious!
Use your imagination... here's a guideline:

  • 1 serving of meat per pocket (chicken, shrimp, beef, pork, or even hamburgers can be used) - be sure to cut up the meat into bite-size pieces so you won't need to worry about using a knife

  • various vegetables - cut in chunks (potatoes or sweet potatoes, carrots, zucchini, broccoli, onion, peppers, and/or green beans)

  • oil

  • seasonings like salt, pepper, etc. (to taste)

When ready to cook, place it either in your fire's coals or on a grate over medium heat. Directly over the fire would give too much heat. Turn with tongs a couple of times (this is when it's evident whether you sealed the pocket properly or not). You should be able to tell from the smell when they are done. If not, check from time to time, being sure to refold the seal to keep cooking as necessary. Handle with care as the pockets will be hot. Serve in the pockets (but I usually put the pocket in my plate to give sturdiness).

Recipe: Italian Meatloaf

Ingredients:
1 pound ground beef
1 tablespoon ketchup
2 tablespoons dried garlic granules
1 teaspoon olive oil
1 egg
2 cups oatmeal
1 tablespoon Italian seasoning
1/2 cup green can parmesan cheese
salt/pepper to taste

Directions:
Preheat oven to 350 degrees F. Pan-spray a big piece of aluminum foil and place on a baking sheet (for sturdiness). Combine all ingredients. Shape into a loaf-shape and place on the sprayed foil. Drizzle a little oil over the top and rub by hand to coat. Wrap into a foil-pocket. Bake for 1 hour. Take out, uncover the meatloaf, change oven temperature to 375, and bake another 15 minutes. (Crust will form.)

Alternate: I like to combine 1/2 cup ketchup with a little garlic and onion powder , and spoon over the top. I like this crust even better!

Recipe: Chicken and Veggies Foil-Pocket

This is a good meal to make on the grill.

Ingredients:
1/3 cup chili sauce
2 tablespoons honey
4 chicken thighs or breasts
1 can pineapple chunks
2 cups dried broccoli dices
1 cup dried bell pepper dices
1/2 cup dried onion dices
salt/pepper to taste

Directions:
Empty the pineapple juice from the can into a bowl. Add the dried broccoli, bell pepper and onions to the bowl and allow to rehydrate. Prepare and preheat the grill. Combine the chili sauce and honey with the veggies and pineapple juice. Cut two 12x12" pieces of heavy duty foil. Spray with non-stick spray. Place the chicken in the center of one piece of foil and top with veggie mixture and pineapple chunks. Top with remaining piece of foil (spray first) and fold the edges twice to seal. Cook on the grill until chicken is thoroughly cooked.

Today I bought a package of 4 chicken thighs for $2.78 (on sale, with an orange sticker).

2.78 = pkg 4 chicken thighs
1.00 = can of pineapple
.28 = chili sauce
.10 = honey
2.00 = dried vegetables/onions
===
6.16 total, but serves 4 people so... $1.54 per person

Recipe: Quick Sausage Dinner

This is almost a complete meal, all but one ingredients is from your stored freeze-dried / dehydrated foods. Yummy!

Ingredients:
4 cups chicken broth
3 cups dried potatoes dices
2 cups dried sausage crumbles
2 cups dried carrot dices
1 cup dried cauliflower dices
1/2 cup dried onion dices

Directions:
Add all ingredients to a medium saucepan pan and let sit for 20-30 minutes to rehydrate. Add water if necessary. Gently add heat to medium, cooking until all is heated through. Serve hot, with perhaps a fresh cole slaw.

Alternate:
Place a large sheet of super-strong aluminum foil in a large outdoor baking dish or lipped-baking sheet (for strength). Add all ingredients, and fold the foil into a packet. Let sit for 20-30 minutes to rehydrate. Heat on grill or cookfire until food is heated through.

Recipe: Pork Chop Cassarole

An easy recipe to do in a cassarole dish in the oven or in a foil pocket on the grill (easy clean-up):

Ingredients:
6 pork chops
6 sweet potatoes
¾ cup brown sugar
1 ½ cups milk

Directions:
Preheat oven to 350 degrees F. Oil a baking dish. Put milk in a medium skillet and heat to hot but not boiling. While heating, slice the sweet potatoes and layer them into the baking dish. Sprinkle the brown sugar on each layer as you go along. Fill only 3/4 to the top. Pour the milk over the sweet potatoes. Wipe the skillet clean, spray or add 1 tablespoon oil, and add pork chops. Brown. Season to taste. Place browned pork chops over the potatoes. Cover. Bake in oven (or in foil pocket on grill) for about an hour. Uncover last 5-10 minutes to allow the pork chops to finish browning.

Recipe: Green Beans with Almonds

This is a simple recipe to dress up a casual meal. If you have canned beans, use about 4 cans, or 1 quart of home-processed beans.

Ingredients:
1 16-ounce package frozen green beans
1/2 cup water
1/4 cup honey
1/2 cup slivered almonds
1/2 teaspoon garlic powder
2 teaspoons lemon juice
salt and pepper to taste

Directions:
Toast almonds (place on cookie/baking sheet and roast at 350 degrees F. for several minutes until just barely lightly browned. Combine water, honey and lemon juice. In a medium sized baking dish, add all ingredients and bake for 45 minutes until beans are tender.

Alternative: Can add all ingredients to a large sheet of aluminum foil, fold over, and grill until beans are tender. Yum!

Recipe: Cheezy Chicken Chips

Just threw this together for Very Hungry Tween Son (VHTS) and he couldn't get enough. Must be that hollow leg!

Ingredients:
shredded mozzarella cheese (dehydrated works fine)
tortilla chips
canned chunk chicken

Directions:
Lay out tortilla chips (or tortillas) on baking sheet. Sprinkle shredded cheese on the chips, then bits of chicken. Bake until cheese is melted. Serve with salsa, chilies, or sour cream if desired.

Alternate:
Place on large sheet of heavy-duty foil, fold into a foil-pocket, and grill until cheese has melted.

Recipe: Apple Summer Sausage

This can be done in the crockpot (start in the morning and eat at dinner) or as a foil-pocket on the grill:

Ingredients:
4 cups chopped Summer Sausage
. . . . (the kind that stores without refrigeration)
2 cups chunky applesauce
1/2 cup brown sugar
2 tablespoons dried garlic granules

Directions:
Combine all ingredients and cook in crockpot (on low) 6-8 hours. Or wrap in heavy duty aluminum foil and grill for 20 minutes or until heated through.

Recipe: Cheezy-Chicken Foil-Pocket

Ingredients:
2 cans chunk chicken
1 10 3/4 ounce condensed cream of chicken soup
1/3 cup water or white wine
1 package stuffing mix
1/2 cup green can parmesan cheese

Directions:
Spray a large sheet of heavy duty aluminum foil. Add chicken to bottom. In a small bowl, combine the wine, soup, and stuffing mix. Spoon over the chicken chunks. Top with parmesan cheese. Fold foil over to form a pocket. Grill outside until heated through, or bake in 350 degree F oven until heated through.

Recipe: Apple Bits

Apple Bits:
· 1 cup dried apple dices (rehydrated)
· ¼ cup raisins
· 1 tablespoon butter (or lactose-free equivalent)
· ½ teaspoon cinnamon
· 1 teaspoon honey

Directions:
Mix rehydrated apples and raisins on aluminum foil. Dot with butter. Drizzle apples with honey and sprinkle cinnamon. Fold foil over apples to form a pouch. Grill outside on hot heat or bake at 350 degree oven for 4-8 minutes. Remove and eat right from pouch. Serves 1.

Recipe: Apricot Chicken

Apricot Chicken in a Foil-Pocket

Ingredients:
2 5-ounce cans chunk chicken in water
1 teaspoon ground ginger
1/2 cup apricot preserves or all-fruit
1/3 cup bottled italian salad dressing

Directions:
Drain water from chicken. Combine all ingredients on a large sheet of heavy-duty aluminum foil. Fold over into a foil-pocket. Grill/heat until chicken is heated through. Lightly mix when serving. Can do in individual pockets for no clean-up.

Note: Unless you buy a gluten-free salad dressing, chances are it was made with white distilled vinegar which is NOT gluten-free.

Foil-Pocket: Bar-B-Que Chicken

Bar-B-Que Chicken:

· 1 large can chicken breast
· 2 ½ to 3 cups bottled bar-b-que sauce
· ½ cup water
· ¼ cup dried onion dices

Directions:
Heat all ingredients until onion has rehydrated and sauce is thick. Serve as a sandwich spread. Garnish with hot sauce, lettuce, tomato, bell pepper and pickles cucumbers, as desired. Easy to do as a Foil-Pocket meal.

Easy to spice up with hot sauce, more onion, less bar-b-que sauce, etc for a bit more vroom.

Foil-Pocket: Potatoes and Bacon

This is an easy recipe:

6 slices bacon
1 potato, sliced
1/2 medium onion, sliced
1/2 bell pepper, diced

Tear off a large heavy-duty aluminum sheet. Spray, and place 6 strips of uncooked bacon in the middle, sides touching. Cover with the sliced potato, onion and bell pepper. Season if desired. Fold over the foil and seal the pocket. Grill until bacon and potatoes are done (possibly 30 minutes - depends on the heat of your grill).

Delicious!

Recipe: Turkey Shepherd's Pie

What to do with all of that left-over Thanksgiving turkey? Try this shepherd's pie!

Ingredients:
1 cup dried onion dices or 1 medium onion, chopped
1 tablespoon olive oil
4 cups chopped turkey (or 1 pound ground turkey, browned)
2 1/2 cups various dried vegetables (corn, peas, carrots, peppers, canned mushrooms, squash, etc.)
1 1/2 cups gravy (see below)
4 cups mashed potatoes (instant or leftovers)
salt and pepper to taste

Directions:
Saute onion in olive oil. Add turkey and vegetables. Add gravy, and salt/pepper to taste. Stir to mix. Spread in bottom of a baking dish big enough (try a 2-quart). Top with potatoes. Bake 30 minutes at 350 degrees. Very filling and quite tasty.

Variation: Use extra-heavy-duty aluminum foil to bake as a Foil-Pocket. Make small enough for a single serving or large enough for everyone. This practically eliminates clean-up.

Gravy:
3 tablespoons olive oil
1 tablespoon butter (or lactose-free equivalent)
4 tablespoons flour (or corn-starch for gluten-free)
1 1/2 cups chicken broth

Heat oil and butter. Sprinkle in the flour and cook for several minutes, stirring (don't let it turn brown). Add chicken broth and stir. Will thicken up after several minutes.

If you are careful with ingredients this is GLUTEN-FREE and HEART-HEALTHY.
