We were tired this evening.... attended a winter festival in a nearby town, shopped for dog food, put together an exercise machine. We didn't feel like cooking what was on the menu (home-baked fish nuggets) so we made plain rice in the microwave, and opened a can of Van Camp's baked beans/pork-n-beans. Not much effort. Not much money (about $2 for all three of us, and one of them is a growing boy). Not very inventive. But filling.
So, IS rice and beans a good dinner? Well, it's not very creative but it gave us protein and a grain. Next time, we'll eat some carrots or an apple too.
