Menu-Challenge #2: Cornmeal, Lentils, Yams, Pineapple, Celery

Here's another Menu-Challenge.

Goal: using pantry/stored foods or produce from your garden or windowsill planters to make a healthy well-balanced meal. Be creative.

Use the following ingredients:
-cornmeal
-lentils
-yams/sweet potatoes
-pineapple
-celery

You can also use basic ingredients like: water, flour (soy, wheat, rice, etc.), powdered milk, bouillon, "green can" parmesan cheese, molasses/honey/sugar, salt, baking soda, baking powder, vinegar, oils, yeast, onion, garlic, cinnamon, nutmeg and other herbs and spices).

I like lentils. I like corn meal. I was tired of lentils and rice so went looking for other protein compliments for lentils. I found corn, and potatoes are good compliments for lentil proteins. 2 cups lentils, 1 cup corn meal, 1 died yam. 5 cups water. 12 oz can tomato sauce. 14 oz can kernel corn 4 cloves garlic. 1 onion diced. 2 teaspoons each of basil, oregano, chili powder. 2 tablespoon olive oil. Put everything in a rice cooker,stir, turn on rice cooker. Check rice cooker after 10 minutes, stir, continue cooking until lentils are tender. I think this is delicious, but dont have any victims to cook for and verify.
