Recipe: Apple Oatbars

Very filling and sturdy. Takes a while to make so it's a good thing it's Saturday!

Apple Oatbars:

4 cups uncooked oats
2 cups applesauce
2 tablespoons cinnamon
1/2 cup chopped or minced walnuts
1 cup water
2 eggs
1 teaspoon salt (or less to taste)
1 teaspoon vanilla extract
1 teaspoon baking powder

Combine all, stirring gently. Let sit for 20 minutes. Add more water, if needed. Preheat oven to 350 degrees F. Pour into sprayed medium baking dish. Bake for 60 minutes, or until firm. Cut when nearly cool.
