Recipe: Meatloaf

Here's a good recipe for Meatloaf.

Ingredients:
2 cups dried ground beef (or 1 pound fresh ground beef or lamb)
1 cup uncooked oats
1 egg
1/4 cup milk (oat, goat or cow)
1/2 cup dried onion dices
1 cup tomato sauce
1 teaspoon dried thyme
2 tablespoons spicy brown mustard
2 tablespoons dried parsley
salt/pepper to taste

Directions:
Preheat oven to 350 degrees F. In large mixing bowl, rehydrate dried ground beef with tomato sauce and a little water (if necessary). (Skip that step if using fresh). Combine rest of ingredients in bowl and mix until lightly combined - don't over-mix or the meat will become a little tough. Pat into a medium baking dish or on a large sheet of aluminum foil (this extra space allows grease/fat to drain away as opposed to a loaf pan). Bake 35-45 minutes or until outside is brown and crispy. (Sometimes I top with a little tomato sauce mixed with onion powder about 10 minutes before it's finished.)
