Recipe: Rice Muffins #1

These are yummy and filling. Good accompaniment to any "rice" menu.

Ingredients:
2 cups brown rice flour
2 teaspoons baking powder
4 tablespoons stevia (a natural sweetener)
1 egg (fresh or rehydrated equivalent)
1 tablespoon almond oil
1 cup milk (reconstituted--rice, goat or cow)

Directions:
Preheat oven to 350 degrees F. Beat egg; add oil and milk, and mix well. Add rest of ingredients whip for 1 minute. Fill paper-lined muffin tin 3/4 full. Bake 25-28 minutes.

Depending on the milk you choose, these can be lactose-free.
