Recipe: Marinated Bean Salad

Easy No-Cook Recipe full of protein and taste. Can be either a side-salad or main dish.

1 can yellow wax beans
1 can green string beans
1 can chickpeas
8 green onions, chopped (or 1/4 cup dried green onion dices)
1/2 cup chopped orange bell pepper (or 1/4 cup rehydrated dried bell pepper dices)
1/2 cup sugar
1/3 cup apple cider vinegar
1/3 cup olive oil
salt/pepper to taste

Drain and rinse beans/chickpeas. In a medium serving bowl, combine beans, onions and pepper. In a smal bowl, mix rest of ingredients until sugar dissolves. Pour syrup over bean mixture. Chill for a couple of hours, or overnight.
